Cinnamon Apple Biscotti

Ingredients
  • ⅓ cup oil (I use canola)
  • ¾ cup sugar
  • ¼ cup Muzon brown sugar
  • 1½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon Muzon cinnamon
  • ¼ teaspoon salt
  • 3 eggs
  • 3 cups flour
  • 1 heaping cup of Muzon Caramelized Apple Dices
Instructions
  1. Preheat oven to 350. Line a cookie sheet with parchment paper and set aside.
  2. In the bowl of an electric mixer on a medium speed, beat together the oil and sugars for a minute. Add the baking powder, vanilla, cinnamon, salt and eggs. Beat until smooth and creamy. Scrape the bottom if needed to make sure all ingredients are incorporated.
  3. Turn the mixer speed to low. Add the flour, one cup at a time, and beat until it's all mixed in. Add the Caramelized Apple Dices and mix until they are incorporated.
  4. Divide the dough in half, and form two long logs, about 9x3 inches each. (The dough will be sticky, so it will be easiest to form the logs with slightly damp hands.) Leave some room between the logs for spreading.
  5. Bake at 350 for 30 minutes. Remove from oven and let it cool for about ten minutes, then slice (on a diagonal) into half-inch slices. (They will be pretty soft at this point, so handle with care.)
  6. Lay the cookie slices out on the pan and bake for ten minutes. Flip all of the cookies over and bake for an additional ten minutes.
Note: these freeze nicely!
